Easy peasy lunch. I used the leftover tomato-kale sauce from an earlier meal this week. See Stewed Garlicky Tomato & Kale with Egg.
Cook some dried spaghetti to almost el dente (about 2mn shy of being done to your liking), in salted low-boiling water. Then pour out almost all the water, reserving about 1/4 cup in the bottom of the pot, with the spaghetti. Next, add whatever homemade sauce you have on hand (or chop up a tomato and finely-diced clove of garlic to use instead), and mix for 1-2 minutes to warm. Be careful not to overcook the pasta. Place in bowl(s) and then using a veggie peeler, shave a bit of parmesan on top of each serving. If you like, top with a few leaves of fresh picked basil. Delicious, quick lunch in about 10-15 minutes!
