Salmon, 2 ways

These are both Asian inspired recipes:

Za'atar Spiced Salmon

Lay your salmon down on a parchment covered baking sheet, skin side down. Sprinkle liberally with Za'atar, kosher saltand fresh ground pepper. Bake at 400F for 11-14mn, depending on how big it is. It should still look a tiny bit raw in the middle, when you pull it out of the oven. It will cook more as it rests. Be careful not to overcook.


Soy-Miso Glazed Salmon

Lay your salmon down on a parchment covered baking sheet, skin side down. In a small bowl, combine equal parts miso, soy sauce (I use Tamari or Coconut Aminos) and brown sugar. For 1 person you might just start with 1 tsp of each. For a large piece of Salmon, when feeding a crowd, you might use 1/4 cup of each. Brush the glaze allover the top of the Salmon. Bake at 400F for 11-14mn, depending on how big it is. About 1/2way through baking,drizlemoreof the glaze on top. When done cooking, the salmon should still look a tiny bit raw in the middle and it will flake easily. It shouldn't cook to the point where it is dense like a steak. It will cook more as it rests. Be careful not to overcook. If you look at the picture above (after Salmon rested for 5 mn), the Salmon on the left is cooked perfectly but the Salmon on the right stayed in the oven just a tiny bit too long. It's denser and not as flaky...but luckily it was still moist!
