To make my breakfast this morning, I started with a few mixed brown mushrooms. After washing them and chopping them up, I sautéed them in a bit of butter. I scrambled an egg, with a little milk, using a fork, and then added the egg to the pan. I kept a few mushrooms pushed over to the side, because I wanted to add them to the top. Even if it's just breakfast for one, there is some joy in making it pretty. When the eggs were glossy, and almost done cooking, I plated them. They finished cooking from their own heat, once on the plate. Then I just topped with some sunflower sprouts that I had in the fridge. Any type of micro greens would work well here, especially radish.
