Lettuce wraps (lettuce from my garden): double-layered red lettuce with slow-cooked pinto & black beans, carne Asada, radish and cilantro

Open-faced Ezekiel bread sandwich with turkey & Swiss

Shiitake & Sausage and Stir Fry, with Microgreens-avocado salad

Beet and blueberry smoothie

Zucchini "pasta" with homemade marinara

Homemade sushi

Wednesday

Mushroom and microgreen omelet

Salad, everything picked fresh from my garden...leafy red & greens lettuces, sweet basil, dill and oregano. And a drizzle of fresh squeezed OJ mixed with a dab of Aji paste

Pork Chops over polenta & "fridge raid" salad...microgreens, carrot, cucumber and radish, w/ lemon and EVOO vinaigrette

Thursday

Sourdough toast with cottage cheese, and 1/2 banana...and later a snack of a couple chile-garlic pickled carrot spears

Work lunch from Chop Shop - Sweet Soy Steak Bowl with quinoa

Ahi Tuna open face sandwiches on homemade sourdough...with dill pickle mayo and home-fermented Chile sauce

Friday

Hard boiled egg and berries

Green leafy salad (same as Wednesday lunch)

Out to Dinner - Casa Mia
