Meatloaf with Wine Soaked Onions

The meatloaf recipe is from #wineloverscookbook. I made a salad and some mashed potatoes to go along, with ingredients I had on hand. The potatoes were whipped with butter, cream, sour cream and blue cheese pieces. For the salad, I whisked together some diced shallots, a little oranje juice, walnut oil, EVOO, red wine v vinegar and salt & pepper. All yummy...the meatloaf was super moist!
