Macadamia-Coconut Crusted Fish

Ingredients

1/4 c dried unsweetened coconut flakes

1/4 c organic raw macadamia nuts

pinch of salt

1 egg

2 tbsp coconut oil

4 white fish filets (cod, halibut, other)


Process

Put the dry ingredients into a small food processorand blend until finely chopped. Transfer to a small bowl. In a 2nd small bowl, crack an egg and whisk well. Heat the coconut oil in a shallow saute pan, over medium heat. Dip the fish into the egg mixture, then the coconut-macadamia mixture and saute until bottoms of fish are golden brown. Flip the fish over, turn off heat and cover. Leave for 5-7mn or until fish is cooked through and other side is also golden brown..
