Citrus - Pomegranate Salad

Cut out sections of an orange, mandarin and grapefruit. Do this over your salad bowl to catch the juices. Add sections to the bowl as you go, and discard the rinds and pith. Add a couple tbsp olive oil and a pinch of salt. Stir gently. Add a few handfuls of arugula, some thinly sliced red onion and chives, and pomegranate seeds. Proportions are to your liking. Toss and taste. Season with more salt, and some pepper if desired.
Optional: Top with seared scallops

Sauce your scallops in a little butter (or EVOO or avocado oil to make this DF) over medium high heat, a minute or two on each side. When the scallops are lightly brownedon both sides, turn the heat down to med-low. Cook for another few minutes, just until the flesh is opaque. Eat alone or place a few scallops on top of individuak salad servings.
