Chicken Tortilla Soup

I had made some chicken soup recently with a whole chicken that I roasted. I had shredded the meat and made chicken broth with the carcass. After making the chicken soup, I put the leftovers in the freezer...white chicken chili, actually, without any beans. There are lots of great recipes online for white chicken chili, and I used one of those as a starting point, Although, instead of the sour cream, I add just a bit of full-fat cream and some whole milk homemade yogurt (once it's off the heat, and only a little at a time...so it doesn't curdle.) I slowly heated up the frozen leftovers on the stove, then poured some in a bowl, added a few corn tortilla chips and a tiny bit of fresh-shredded sharp white cheddar. Then I microwaved it for just a bit and finally added a sprinkling of diced red onion. It didn't take more than 10mn total. The joys of having healthy options in the freezer, for a quick yummy work-day lunch!
