Pork & Beef Meatloaf with Fresh Corn Salad

The meatloaf recipe comes from my #homegrown cookbook, and it's my favorite meatloaf. My husband agrees. Super moist and lots of flavor...a difficult dish to eat slowly because it's so yummy! For our vegan guest, I made an alternate main...wild mushroom toasts with turnip puree, also from #homegrown. For the salad, I had some corn cobs from the farmer's market so I cut the corn kernels off and cooked them along with chopped green beans, and some red onion and red chiles. I made a simple EVOO and red wine vinegar dressing and topped the salad with diced chives.
