This has been a favorite in our family, for about the past 20 years or so. My kids now make it on their own!
Preheat the oven to 350F. Mix 1/4 cup brown sugar with 1/4 chopped pecans,and a little brandy just to get it wet and spreadable. Open up onesheet of puff pastry and press or roll out the seams, so they don't show. Unwrap a wheel of Brie and set ir in the middle of dough, just to guage the size. Now remove it and spread a circle of the brown sugar-brandy mix, the size of the cheese. Use 1/2 of the spread. Cover the spread with the wheel of cheese, then cover the cheese with the other half of the spread. Cut off the4 corners of the dough, then wrap the edges up and over the top. You'll have a tidy little package. Turn the package over, seam s ide down, and place on a parchment covered baking sheet. With the cutpiecesof dough, createsome leaves and berries and place on the top how you would like. In a small bowl, whisk one egg and brush it all ovre the exposed dough, including the leaves and berries on top. Cook until the puff pastry is browned and flaky. Let cool for 10mn, or the cheese will completely ooze out. You want it to be a little oozy, but still have some stay within the puff pastry. Serve on a platter with sliced green applesall around it...yummy!
