A little bit of Kimchi in my Sauerkraut

I love the flavor and health benefits of fermented foods, especially sauerkraut. And I enjoy the heat of red chiles. Thus kimchi-inspired sauerkraut. Not exactly sauerkraut and not a typical kimchi, but it worked! It's tangy, sinus-clearing, and addictive! I started with thinly slicing a small green cabbage, and then added the salt and pressed until juices were released. I then added in some red chiles, a lot of garlic, fresh-grated ginger, diced green onions, thinly sliced radishes, a dash of fish sauce and some crumbled pieces of green seaweed. I mixed it all up, squished it into this one jar, and let it sit out to ferment for 24 hours before moving it to the fridge. A little serving with some avocado toast, and it's the perfect breakfast...plus, great for gut health!
